Beer-Brined Barbecue Chicken Legs

4 cups water
1/2 cup granulated sugar
1/2 cup salt
4 (12 oz) cans amber beer
16 chicken drumsticks
4 Tbs vegetable oil
4 Tbs Brookshire’s Rack Rub BBQ Seasoning
1 cup Brookshire’s BBQ Sauce
Directions
- In a saucepan, combine water, sugar and salt over high heat. Stir until sugar and salt are dissolved. Remove from heat. Slowly stir in the beer to keep foam from developing. Let the mixture cool to room temperature.
- Place chicken in a gallon-sized zip-top bag. Pour in the brine liquid. Refrigerate for at least 8 hours, but not more than 24 hours. Remove chicken from the brine, and discard the brine. Rinse the chicken, and pat dry with paper towels. Rub the chicken with oil and barbecue seasoning. Heat grill to medium heat. Place chicken on the grill. Cook for about 12 minutes per side until chicken is cooked through. Baste with barbecue sauce while grilling.
